Testing out Mirin and Usukuchi Shoyu Substitutions + Bonus Easy Saimin Recipe I got a lot of comments on some of the easy quick recipes that people were having a really hard time finding mirin and usukuchi shoyu in some areas. I decided to test out some substitutions for those ingredients with some easier to find ingredients.

Mirin Substitute:
1TBSP Fake Mirin = 1Tbsp Sake + 1tsp Sugar (you can also try a dry white wine if you can't find sake in your area)

Usukuchi Shoyu Substitute:
1Tbsp Fake Usukuchi Shoyu = 1/2Tbsp Soy Sauce + 1/4tsp salt

Shio tare:
450ml water
70g sea salt
25ml fake mirin
5g sugar
7.5ml rice vinegar
25ml fake usukuchi shoyu (12.5ml soy sauce + 2g salt)
2.5g MSG

Easy Saimin:
450ml water
1tsp chicken stock powder
1tsp dashi stock powder
2tbsp shio tare
1tbsp chicken oil
chopped green onions
