Recipe

Olive oil 8 g
Sliced red onion 200 g
Salt
Simmer over middle heat for about 2 min.

Brown sugar 40 g
Vegetable stock 80 g
Balsamic vinegar 15 g
Red wine 20 g
White wine vinegar 20 g
Cover with a lid and simmer for 45 min over low heat. Stir them sometimes while simmering.
Once you get the perfect texture, remove the lid and season with salt & black pepper, and keep simmering to make a reduction.

Cool down well before serving.
